With seductive white flower aromas, intense minerality and a non-acidic dryness, a sensitive culinary approach is required. Mildly-flavoured raw or lightly-cured meat and fish are a good place to start, as are hard, mature cheeses.

HOW IS IT MADE?
Our Extra Brut is defined at its very conception: the challenge to produce a unique style which, after careful and intricate blending results in a champagne that requires very little sugar to be added. Starting with 100% Pinot Noir, we chemically test and of course taste the juice, adding tiny quantities of sugar with a fine pipette until we achieve perfect harmony.
